Abstract

Sugar is a sweetener that is almost consumed by people everyday, but high sugar consumption can also cause cavities. Bacteria in the mouth, such as Streptococci mutans, will ferment sugars. Due to health reasons caused by these sweeteners, stevia as a natural  sweeteners, low or non-calorie, and is cheaply priced. The stevia plant part used as a sweetener is the leaves. The way to use it is by drying. Stevia has several advantages such as Stevia leaves contain many glycosides diterpen with the level of sweetness between 200-300 times sugar cane, but the caloric value is very low so safe to be consumed by diabetics and obesity. In addition, stevia is also non-carcinogenic. In the manufacture of this syrup using Completely Randomized Design (RAL) 3 treatment and repeated 3 times. The treatments tested were the effect of heating temperature at 70°C - 90°C. Stevia extraction at 80°C is preferred by the respondents
